Doug Psaltis, with over two decades of experience managing esteemed establishments, joined Eat Well Hospitality alongside Co-Founder Hsing Chen. Together, they launched Andros Taverna in February 2021 and Asador Bastian in 2023, earning numerous accolades for exceptional cuisine and guest experience.

Andros Taverna, located in Logan Square, pays homage to Psaltis’ Greek heritage and quickly gained local and national recognition, including awards such as “Best Restaurant in Chicago” from Chicago Tribune’s Readers’ Choice Awards and Esquire’s “Best New Restaurants in America, 2021.”

Psaltis’ culinary journey includes collaborations with renowned chefs like Alain Ducasse, Dan Barber, David Bouley, and Thomas Keller. He achieved acclaim in New York City at Michelin-starred restaurants like Country, Mix, Bouley Bakery, and ADNY with three Michelin stars.

Growing up in a restaurant family, Psaltis gained hands-on experience at his parents’ Greek diner. His memoir, “The Seasoning of a Chef,” published in 2005, documented his early experiences as a chef. In 2012, he moved to Chicago, becoming a restaurateur and partner in successful ventures like RPM Restaurant Group, Pizzeria Portofino, Sushi San, and more.

Psaltis also served as chef managing partner for Lettuce Entertain You, overseeing operations and consulting on various restaurants. He co-founded the Windy City Smokeout, a popular barbecue and country music festival.

Known for his expertise in restaurant concept development and menu creation, Psaltis co-created Eat Well Hospitality with his wife, Chef Hsing Chen, in October 2022. They revived the iconic “Flair House” as Asador Bastian in March 2023, earning acclaim such as three stars from the Chicago Tribune and Esquire’s “Best New Restaurant in America, 2023.” The restaurant is recognized as one of the world’s best steakhouses by World’s 101 Best Steak Restaurants.
