Secrets of Le Grand Fromage with Ihsan Gurdal Ihsan Gurdal, a long-time friend of the Nantucket Wine Festival, is considered to be one of the great cheese savants in the world. From his base at Formaggio Kitchen in Cambridge, Ihsan travels the world seeking out artisan producers of the world's finest cheeses. His performance is masterful, combining passion and intellect. He will take you through a sensory exploration of cheese and some favored condiments and explain the relationship between cheese and wine. Wines from Robert Kacher Selections, presented by Carole Decouard. Bobby Kacher is considered by Robert Parker to be one of the most important of America's artisan importers and has literally changed the way wine has been made in Europe. Join John Gertsen, bar manager of Drink, and Robert Cooper of Cooper Spirits for an appetite-whetting seminar about the art of the aperitif. Learn about the history and cultural importance of the aperitif, and how you can seamlessly incorporate it into your entertaining style. Aperitif cocktails will be paired with classic hors d'oeuvres prepared by William Johnson, of Barbara Lynch Gruppo's Drink and Sportello. The aperitif tradition dates back to the 17th century, most commonly used in Italy. Aperitifs can be made from classic ingredients or new classics such as St-Germain. They are a great way to entertain before a dinner or as the focus of entire party concept.

The Sonoma Coast: America's Hottest Viticultural Region The far coast of Sonoma County, the "true Sonoma Coast," is home to some of the New World's most distinctive pinot noir. David Hirsch, a viticultural pioneer there, started planting his now-famous vineyard above Fort Ross in 1980. Kistler, Williams Selyem, Littorai and other legendary California producers have made vineyard designates from Hirsch, a group that has narrowed since Hirsch built his own winery on site in 2002. Jamey Whetstone purchased grapes from Hirsch until 2005. Based in St. Helena, Whetstone trained at Turley Wine Cellars before establishing his own label in 2002. He now produces several bottlings of Sonoma Coast pinot noir. Join Joshua Greene, editor and publisher of Wine & Spirits; David Hirsch, proprietor of Hirsch Vineyards; and Jamey Whetstone, proprietor of Whetstone Wine Cellars, in a discussion of the wines of the Sonoma Coast. Whetstone and Hirsch will provide their perspectives on the Sonoma Coast through their wines, including varied interpretations from the Hirsch Vineyard, produced by Whetstone, Hirsch and others.

Matching Wine with Food Levent Bozkurt, proprietor of Stonehedge Inn & Spa and Left Bank Restaurant and owner of the largest wine cellar in New England will share an intriguing seminar of matching wine with food. If you thought you knew the ins and outs of food and wine pairing, wait until you experience this seminar! Levent will be accompanied by his Executive Chef, Alex Facio, and Christiane Schleussner, Assistant Winemaker of Silver Oak. The Silver Oak 2005 Alexander Valley Cabernet Sauvignon will be the featured wine in this seminar and Chef Facio will prepare veal "Milanese" with spinach and picatta sauce and pan-roasted dry aged rib eye with whipped truffle potatoes, roasted carrots, beets and spring peas, Cabernet reduction.
