Un Monde de Fromage from France to Vermont Adeline Folley, French born and trained Master Fromager, will help you discover the world of cheese, tasting back and forth between the Tour de France and the Vermont Trails. France, with over 2,000 years of cheesemaking tradition, is the reference for fine fromages, part of the national culture and terroir. Over the past 20 years, Americans have become serious about cheesemaking. In 2007, Vermont was cited as the Napa Valley of cheese, and this will be the focus of our presentation. We will explore a number of cheeses, hoping to show that Americans, specifically Vermonters, are serious about cheesemaking! Wines will be provided by Domaine Select Wine Estates. Bon voyage!
Comparisons of the following: --Ash-ripened goat cheese from the Loire vs. Vermont Bonne Bouche from the Vermont Butter and Cheese Co. --The two kings of both countries: Cheddar vs Comte --Roquefort vs Green Mountain Farmstead Blue Cheese.

Exploring American Artisan Cheese -- Hand-Crafting a Revolution One Wheel at a Time You might not know it, but for the past 20 years a revolution has been going on in America. The steady climb of American artisan cheesemakers--a skilled and tireless lot--offers proof of consumers interest and respect for traditional European style cheesemaking, right here at home. In this session, get an introduction to some of Americas premier artisan cheesemakers, through a tasting of their exemplary products. Your taste buds will be tickled and most likely quite surprised at the quality and depth of flavor that can be found from cheesemakers who live right next door. Matt Jennings, owner of Farmstead, Inc., in Providence, will be your host. Wines will be provided by Australian Premium Wine Collection, and presented by Ian Davies. The cheeses to be presented are: --'Hannahbells' from Shy Brothers Farm, Westport, Massachusetts. A soft, buttery and herbaceous little thimble-sized cheese. --Bellweather Farm's 'San Andreas'. A firm, aged sheep's milk cheese from the Callahan Family, in Sonoma, California. Flavors of hay, pasture & a toothsome cheese. --Pleasant Ridge Reserve. Made by Mike Gingrich in Dodgeville, Wisconsin. Sweet, nutty, buttery, creamy,- like an aged gouda/gruyere combo. --Vermont Butter & Cheese Company 'Bijou'. This 'crottin' style cheese is salty & tangy with a ripe rim and chalky center. --Twig Farm 'Blue'. This is a raw, aged goat's milk cheese from Vermont. Only very slightly veined, it is dense, creamy and slightly gamey.

Brunello to Vin Santo: A Taste of Toscana (wine tasting and book signing with Italian Wine Merchants) A spectacular Tuscan tasting led by Sergio Esposito, the lead authority on Italian wine and owner of Italian Wine Merchants (a wine specialty store located in Manhattan, opened in 1999 with Mario Batali and Joe Bastianich). Widely considered the epicenter of the Italian wine world, Toscana is steeped with winemaking history and tradition while simultaneously positioned at the forefront of Italys modern wine movement. From the variations of the Sangiovese varietal expressed in the Chianti and Brunello zones to the fleet of innovative Super-Tuscan blends that broke with tradition--Tuscan wines deliver quality and world-class style.
Mr. Esposito will be signing copies of his new book Passion on the Vine: A Memoir of Food, Wine, and Family in the Heart, a book that Bill Buford describes as, "Without qualification, the best book about Italian wine today, if only because Sergio Esposito understands that its mysterious greatness is in its poetry, the earth, its diurnal magic, the ghosts of great-grandfathers. A beautiful, boldly sentimental memoir." The price of the seminar includes a complimentary copy of the book, which retails for $25.
Wines: Le Macchiole Paleo Rosso, Villa Mangiacane Chianti Riserva, Il Macchione Vino Nobile Riserva, Il Palazzone Brunello di Montalcino Riserva, and Castellin Villa Vin Santo.
