Ihsan Gurdal, a long-time friend of the Nantucket Wine Festival, is considered to be one of the great cheese savants in the world. From his base at Formaggio Kitchen in Cambridge, Ihsan travels the world seeking out artisan producers of the world's finest cheeses. His performance is masterful, combining passion and intellect. He will take you through a sensory exploration of cheese and some favored condiments and explain the relationship between cheese and wine. The Nettle Meadow Kunik is a unique and decadent cheese made from goat's milk and Jersey Cow's milk cream at Nettle Meadow Goat Farm in Thurman, New York. Nettle Meadow is a 50-acre, 100-goat farm in the Southern Adirondacks; its Kunik is a wheel of triple creme with a bloomy, white rind and tangy, buttery flavor.

The Callahan Family hand-crafts this inspiring sheep's milk cheese in California. The milk for these cheeses comes courtesy of their own flock of sheep. Bellwether Farms is Californias original sheep dairy, and was its only sheep dairy until 2004. This raw milk farmstead cheese is a Bellwether original. It is smooth and full-flavored and is a delicious table cheese. San Andreas is terrific with hearty and fruit forward red wines.

The East Friesian crossbred sheep are raised on organic fields and pastures and their health is meticulously maintained to ensure the best quality of life. This care and quality of life results in some of the best sheep dairy products in the country. Using 100% sheep milk, Ewe's Blue is made Roquefort style on the farm.
