Peter Lehmann Layers 2008 Nettle Meadow Farm 'Kunik', NY The Nettle Meadow Kunik is a unique and decadent cheese made from goat's milk and Jersey Cow's milk cream at Nettle Meadow Goat Farm in Thurman, New York. Nettle Meadow is a 50-acre, 100-goat farm in the Southern Adirondacks; its Kunik is a wheel of triple creme with a bloomy, white rind and tangy, buttery flavor.
Peter Lehmann Shiraz 2006 Bellweather Farms' 'San Andreas', CA The Callahan Family hand-crafts this inspiring sheep's milk cheese in California. The milk for these cheeses comes courtesy of their own flock of sheep. Bellwether Farms is Californias original sheep dairy, and was its only sheep dairy until 2004. This raw milk farmstead cheese is a Bellwether original. It is smooth and full-flavored and is a delicious table cheese. San Andreas is terrific with hearty and fruit forward red wines.
Peter Lehmann Clancy's Red 2005 Cato Corner Farms' 'Bridgid's Abbey', CT Based on an ancient Belgian recipe, this Trappist-style monastery cheese has a smooth, creamy consistency and a delicious rich taste. Falling somewhere between mild and strong, it has a round flavor, meaning it is well developed and complex. Aged for three months and made from raw cow's milk, Bridgid's Abbey is one of the Great Cheeses of New England!
Peter Lehmann Seven Surveys SMG 2007 Vermont Butter & Cheese Company's Coupole, VT The Coupole is a fresh, young goat's milk cheese shaped like a small dome and dusted with vegetable ash. It hails from the ambitious new Loire-Valley-style production facility at Vermont Butter & Cheese, who have been pioneering innovative dairy products for some time now. Their fresh chevres, spreads, butters, and fermented creams can be found in chef's kitchens and grocery stores across the country. As the Coupole ages, a slightly wrinkled skin develops, and the paste softens and liquefies. This creamy, delightful goat's milk cheese is a wonderful addition to America's dairy products.
Peter Lehmann Eden Valley Riesling 2008 Old Chatham Sheepherding Company 'Ewe's Blue', NY A happy and wooly flock of about 1200 sheep meander through the green and rolling hills of the upper Hudson River Valley, making Old Chatham Sheepherding the largest sheep dairy in the United States. The East Friesian crossbred sheep are raised on organic fields and pastures and their health is meticulously maintained to ensure the best quality of life. This care and quality of life results in some of the best sheep dairy products in the country. Using 100% sheep milk, Ewe's Blue is made Roquefort style on the farm. A Pair of Roses and a Thorn Due to the untimely passing of Dr. Richard Buechel, father of Angela Raynor, the proprietor of The Pearl/Boarding House/Corazon del Mar, we have had to adjust our program for this seminar. We believe that we have come up with a winning replacement; we have called upon two of our old friends to fill in with a fabulous program: Sarah Leah Chase, author, chef, and Nantucket icon; and, from neighboring Martha's Vineyard, Jaime Hamlin, TV personality, presidential caterer, and cookbook author.
